Discover the foundations of fermentation through the two staples every home fermenter begins with: sauerkraut and kombucha. This workshop is designed for beginners who want to understand the why as well as the how — the textures, the scents, the salt levels, the patience and the small signs of fermentation that bring ingredients to life.
We will work with beautiful produce, real fermentation vessels, and cultures that have been cared for over time. By the end of the day, you’ll take home a jar of your own sauerkraut, your own SCOBY, and the confidence to ferment safely and creatively in your own kitchen.
A seasonal lunch will be served in the dining room — simple, thoughtful food that reflects the day’s flavours.
What to expect....
10:30 AM - Welcome Tea & Coffee and Introductions
Begin the day with a warm welcome! Participants can enjoy homemade scones, coffee, and tea by the log fire in the charming setting of the renovated stables.
10:45amThe Principles of Fermentation – Understanding microbes, salt ratios, anaerobic environments, and fermentation safety.
11:15amCrafting Sauerkraut – Knife work, flavouring options, texture, packing and brine formation. Each participant makes a jar to ferment at home.
1pm Lunch – Seasonal, thoughtful, and elegant in its simplicity.
1:30pm Kombucha: Culture & Craft – From tea selection and first ferment to bottling, carbonation and flavour layering. Tasting across stages.
2:15pm Begin Your Brew – Prepare your starter tea and receive your SCOBY. Guidance on ongoing care and second fermentation.
3:00pm Discussion & Troubleshooting – How to adapt recipes, refine flavour, explore further ferments.
