As the days lengthen and warm the hedgerows an abundance of wild flowers and herbs appear. From Elderflower to wild strawberry, angelica to sorrel, and much more besides there is much to explore and discover.Later we pair some of these with garden produce in ways you may not have imagined to produce health boosting and nutritious combinations.A delicious preserve and a health boosting drink for you to take away.
Guided by Mary, an experienced forager with a background in science, cookery, and natural medicine. Mary delights in connecting people with the food a their feet, sharing her lifelong passion for uncovering natures hidden edible and healing treasures growing all around us., we’ll explore the plants that grow all around us — the leaves, blossoms and roots that have been used for nourishment and wellbeing for generations.We’ll begin with a gentle walk, discovering what grows in the fields, hedgerows, and woodland edges at this time of year. Back indoors, we’ll talk about the traditional uses of these plants and how to prepare them respectfully and safely.
Together we’ll make a Spring Tonic, a traditional seasonal herbal blend to help the body wake up after winter. Each person will bring home their creation. Lunch will be served in the house dining room.
10:30 AM | Welcome and Introductions
Every one will meet at Coolamber’ s renovated stables, where guests will be greeted with a tea/coffee and homemade scones. We’ll have a brief introduction to the day’s activities and a short overview of the foraging area and safety guidelines.
Morning Session| Guided Foraging Walk
Begin the day with an immersive foraging session on the grounds of Coolamber. We’ll learn to explore what nature has to offer in early summer from delicate elderflowers to health boosting sorrel and angelica. Identify various plants, herbs, and flowers that can be used for culinary, medicinal, and skincare purposes. Medicine and myths connected with each plant will be also be discussed.
Mary will cover essential foraging tips, including plant recognition, sustainable harvesting, and ethical foraging practices.
1:00 PM | LUNCH
Enjoy a delicious, seasonal lunch inspired by fresh, local ingredients. Relax in the charming period dining room of Coolamber House and share your discoveries from the morning foraging walk with fellow participants
Afternoon Session
In the afternoon, we’ll gather indoors for a hands-on session.
Mary guides through ingredients to prepare your own delicious preserve and a health boosting drink for you to take away.She will guide on proportions, and benefits.This health boosting drink is one of those simple, honest staples that finds a permanent place in your home. Once you learn how to make it, you’ll find yourself returning to it every summer— a small yearly ritual that connects you to the seasons, the land, and your own wellbeing.
